I wanted to share a quick and extremely easy (also extremely messy..) dinner with you all that I whipped together the other night. Even my oh so picky little eaters can't get enough of it! I found it one night while doing my nightly scroll through Pinterest, and thought to myself, " will this even get used? What kid loves and asks for veggies?” (mine do sometimes but that's not the point) Anyway.. It was a crazy on the go weekend with work, the kids had been up in Denver with their grandparents all weekend, and we had spent the majority of the day Sunday basking in the insanely hot weather at the pool, and by the time we got home I had the kids asking like a broken record what was for dinner. And of course, I had nothing set out... but then remembered this recipe. Super quick, super easy AND nutritional! I call that a parenting win-win. All you need is a can of beans, corn, avocado, cheese and tortillas and BAM you have a full, kid friendly, stress free meal. I paired them with a little salsa for a little something extra. I will post the link for the recipe down below! For all you mamas out there that also need a little extra-extra something; this meal pares well with a light, crisp wine like a Pinot Grigio 😉!
